BBQ Chicken Pizza

Ingredients

  • 2 tablespoons olive oil
  • 2 tablespoons butter
  • 2 yellow onions, thinly sliced
  • Kosher salt & black pepper
  • 3/4 cup apple cider
  • 1/2 pound pizza dough, homemade or store bought
  • 1 cup cooked, shredded chicken
  • 1/2 cup BBQ sauce
  • 2 tablespoons chopped green onion
  • 1/2 cup fresh cilantro, chopped
  • 1/4 cup Ranch dressing
  • 1 cup shredded Italian cheese
  • 1 cup shredded Gouda or cheddar cheese
  • 1/2 cup grated Parmesan
  • Fresh herbs for garnish

Directions 

Position oven rack in upper 1/3 of your oven.  Preheat oven to 500 degrees. 

Place pizza dough on lightly oiled baking stone.  Gently press the dough until it covers most of the stone.  Cover and let sit while you prep the pizza. 

In a large skillet, turn on heat to medium-high and combine olive oil, butter, onions, and a pinch of salt.  Cook 5 minutes until softened.  Add half the apple cider and continue cooking another 5 minutes until cider has mostly evaporated.  Add remaining cider and cook another 5 minutes or until the onions are golden and caramelize.  Remove from heat.

In a bowl combine chicken, 1/3 cup BBQ sauce, green onions, and cilantro. 

Assemble:  Spread ranch on dough.  (You may not need it all).  Add a drizzle of BBQ sauce, then layer on onions, chicken and cheeses.  Sprinkle with cilantro.  Put in oven and bake for 10 minutes, rotate the stone and bake another 3-5 minutes until crust is golden and cheese is melted. 

Top with fresh herbs, additional BBQ sauce and/or ranch if desired.
